It had to accept the science of Galileo and the result was the Copernican Revolution. It had to accept because Galileo was willing to put his neck on the line for truth, and the Church, being the ultimate judge and jury of such things, had to decide in favor of the truth that was set before them.
The Church is no longer the judge and jury. The public is. The Church cannot put anyone's neck on the line for advancing the ideas of evolution, or of stem cell research, or of any other advancement in any field. It no longer has the power to put to death anyone who fights its dogma, and so the Church, unable to stop such arguments of science with the threat of torture or worse, continues to fight with every fiber of its theology such advancements.
Had Darwin's life--or any reputable evolutionist's life--been the cost of advancing the truth of evolution, there may have been a Darwinian Revolution winning out over Church doctrine. Instead, we have the spectacle of science forcing many Christians to become more fundamental in their religious beliefs because it is the only way they have to protect their beliefs against what they do not want to see, hear, or speak.
Dogma is created when--and because--religion ignores science and has no theological truths to offer up. This is what the New Advent Catholic Encyclopedia explains about dogma:
Science destroys dogma in the minds of those who are willing to accept the truth of science. In the minds of those who desire to continue to accept the Christian Logos as given to them through the Biblical Word of God, the truth of science becomes a lie when it is in contradiction.
Religion ought to be built on what science is able to tell the Church is the truth about our world, as Copernicus and Galileo were able to tell it. Yet it resists. This is the philosophical/theological battle of the cosmology of physics vs. the cosmology of Western religion
